Grilled Chicken, Courgettes & Sweet Potato with Cinnamon Honey Butter
Ingredients: (serves 1-2)
Olive Oil (at least 2 tbsp)
2 Boneless Chicken Thighs
1 Courgette
1 Sweet Potato
salt and papper to taste
Marinade (Alternatively I also sometimes use Ottolenghi Smokey Honey Marinade, it’s fantastic)
1 Tbsp of Smokey Sweet Paprika
1 tsp of Chipotle Chili Flakes
1 tsp chili powder
½ tsp coriander
½ tsp garlic powder
½ tsp onion powder
1 Tbsp fried onions
2 Tbsp light brown sugar
1.5 Tbsp olive oil
salt and pepper to taste
Cinnamon Honey Butter
1 Tbsp of butter
2 tsps of honey
1 pinch of salt
¼ tsp of cinnamon
Kit Needed:
Grill and aluminum foil to wrap the sweet potato
Packing Tips:
Bag the chicken thighs in the marinade in a ziplock bag. Let sit for at least 30 mins then stick it in the freezer the night before you leave. The chicken will then thaw throughout your hike. I also like to combine all the ingredients for the cinnamon honey butter in a small container that can be heated at camp in hot water to melt the butter. The frozen chicken, courgette and sweet potato then goes into a large ziplock bag when I leave for camp (this does get reused often if it is not used as a garbage bag)
Method:
At camp once you have created a nice bed of coals, wrap the sweet potato in aluminum foil and place it directly in the coals. Depending on the sweet potatoes size it should take around 30-40 min to cook.
Grill the chicken over the coals 5-6 min per side. These times depend on the distance from the coals and the size of the thighs. The internal temp of the chicken should be 74 C or 165 F when done.
When the chicken thighs are almost done slice the courgettes lengthwise into 1-2 cm slices. Brush both sides with olive oil and season. I like to season mine with a honey garlic sweet bbq rub from a company called Fire & Smoke Society. But you can also simply season it with salt and pepper or whatever spices you like.
Using warm or boiling water to melt the cinnamon butter ingredients so it can be poured onto the sweet potato when the chicken and courgettes are ready.
Side note: On this camp I used a bit of wild garlic to garnish the chicken thighs and it was great. Hope you enjoy
