Pork Lo Mein

Ingredients: (serves 1-2)

  • 3 Tbsp Sesame Oil

  • 250g Minced Pork

  • 150-200 g Lo Mein Noodles

  • 2 celery stalks, thinly sliced at an angle

  • 1 Bok Choy, roughly chopped

  • 2 clove of garlic, roughly chopped

  • 1 Tbsp Furikake

  • Salt & pepper to taste

    Sauce Ingredients (mix and combine in a small container)

  • 1 Tbsp Sesame Oil

  • 2 Tbsp Soy Sauce

  • 2 Tbsp Rice Vinegar

  • 1 Tbsp Red Wine Vinegar

  • 3 Tbsp Black Bean Sauce

Kit Needed:

1 pan (at least 7-8 in), gas stove, spatula or spoon, aluminum foil to set aside veg while cooking the pork, pot or kettle to cook the noodles

Packing Tips:

Bag and freeze the minced pork the night before you leave. The pork will then thaw throughout your hike. I place the furikake in a spice container. All other ingredients go into a large ziplock bag (this does get reused often if it is not used as a garbage bag)

Method:

  1. Heat 1 tbsp of sesame oil in your pan on medium high heat.

  2. Thinly slice your celery at an angle then add to the pan. Cook stirring occasionally for 3-4 minutes until slightly softened. While the celery cooks roughly chop the garlic and bok choy. Make sure to cut off and discard the root end of the bok choy.

  3. Once the celery has softened, add the garlic and bok choy to the pan. Season with salt and pepper. Cook for 2 minutes until slightly softened. Once cooked transfer the vegetables to aluminum foil and cover.

  4. In the same pan heat 1 tsp of sesame oil to medium hight heat.

  5. Add the minced pork to the pan. Cook until browned. This can take anywhere from 6-7 min. Once cooked through, add 2/3 of the sauce. Turn the heat to high and cook for an additional 2-3 min until browned and the sauce has been incorporated into the minced pork. Remove from the heat.

  6. With a cooking cup, kettle or bowl, bring a small pot of water to a boil. Add the noodles and cook for 2-3 minutes. With fresh noodles this should not take long. Once tender drain the water from the noodles.

  7. Place the pan with the pork back on medium high heat. Add and stir in the cooked vegetables and cooked noodles. Once you have added the noodles pour the remaining sauce on top and stir to combine.

  8. Once all the ingredients have been combined and the sauce has been absorbed turn off the heat and add half of the furikake. Stir to combine. Season with salt and pepper to taste. Top with the remaining furikake as garnish and enjoy.
