Snobrød (stick bread) Hot Dogs
Ingredients: (serves 1 - makes 2 buns)
Dough recipe:
1 tsp instant yeast
200 ml (finger warm) water
1 tsp sugar
1 tsp salt
2 Tbsp olive oil or melted butter
300 g all purpose flour
Additional ingredients:
a little extra flour to kneed the dough
2 hot dogs and condiments of your choice
Kit Needed:
1 large ziplock bag, sticks from a nontoxic tree
Packing Tips:
For this recipe, I like to combine all the ingredient for the dough (except for the warm water) into a large ziplock bag. If I am using butter I will melt and add that with the water at camp. All the other ingredients for your hot dogs go into a separate ziplock bag (this does get reused often if it is not used as a garbage bag)
Method:
At camp heat 200ml of water until it just becomes warm. If using butter, add the butter to the warm water at this time so it melts.
Now add your water and butter to the ziplock bag with your dry dough ingredients and mix until all the ingredients are combined. I like to then kneed the dough into a ball to help to combine the ingredients but this is not necessary as long as everything is mixed well.
Set aside for at least 1 hour.
During this time, gather two sticks to hold your bread. Select sticks approximately the same width as the hot dogs you’ll be using. Since the bread will cook directly on the stick, ensure the wood is from a non-toxic tree. Oak, Beech, or Birch are good choices. Peel off all the bark with a knife to create a smooth surface for wrapping the dough. If you plan to cook hot dogs as well, find two Y-shaped branches to skewer them. Sharpen the ends of these branches so they securely hold the sausages over the fire.
Once the dough has risen, using a bit of extra flour dust a cutting board or plate. Coat your fingers with a bit of flour and divide the dough into two balls.
Start by stretching the dough into a log shape with your hands, then slowly elongate the dough by gently rolling it between your hands until it is further stretched into a long strip.
Now twist the dough around the section of your stick where you have removed the bark. Make sure you gently compress the dough together so the ends are secured to the stick. Repeat this process with the other ball of dough.
Now it’s time to cook your bread. You have two options: hold your stick over the fire or embers, gently rotating it until all sides are browned; or prop your stick near the fire to cook it slowly. The slow method takes longer and requires occasional rotation to ensure even cooking. If you’re cooking hot dogs, place the sticks with the sausages close to the fire and rotate them regularly as well.
Once the dough has browned on all sides, its time to make your hot dogs.
Carefully remove your bread from the stick, slice down the length and you have a perfect bun to hold your sausage. Add the condiments of your choice and enjoy!
Side Note: You can also enjoy this bread with a spread of jam! Baking fresh bread at camp is a fun and engaging activity, especially for kids. So just have fun with it and experiment.
