Sausage & Peppers with Sweet Chilli Jam

Ingredients: (serves 1-2)

  • Olive Oil (at least 1 tbsp)

  • 3 chorizo or Italian sausage links

  • ½ onion, thinly sliced

  • 3/4 green bell pepper, sliced

  • 3/4 red bell pepper, sliced

  • 3/4 yellow bell pepper, sliced

  • 1 Tbsp of Nando’s Sweet Chilli Jam

  • salt and papper to taste

Kit Needed:

1 nonstick pan (at least 7-8 in) or small nonstick pan plus bowl, stove, spatula or spoon

Packing Tips:

Bag and freeze the sausage links the night before you leave. The sausage will then thaw throughout your hike. All other ingredients and sausages then goes into a large ziplock bag the day of the trip (this does get reused often if it is not used as a garbage bag)

Method:

  1. Heat 1/2 tbsp of olive oil in your pan on medium high heat. I like to use a nonstick pan for this so that the sausage skins do not stick but it is not necessary if you use the appropriate heat for the pan you are using.

  2. Cook the sausages for 6-10 minutes till done, turning to brown each side while cooking.

  3. While the sausage is cooking slice your red, green and yellow peppers and place them in a bowl with ½ tbsp of olive oil. Salt and pepper to taste. You can also wait to use the same skillet to cook the peppers and onions once the sausage is done.

  4. Once the sausages are cooked remove them from the heat.

  5. Begin cooking the peppers on medium high heat, stirring occasionally. While the peppers begin to cook thinly slice half an onion. After about 4-5 minutes add the onion to the peppers and stir to combine. Cook for an additional 3-5 minutes until the onions are soft and translucent and the peppers are tender but still have a bite.

  6. While the onions and peppers are cooking slice the sausages into small bite size pieces. Then add them back to the skillet or bowl with the peppers and onions, stir to combine.

  7. Add 1 tbsp on Nando’s Sweet Chilli Jam to the sausage and peppers (you can add more or less to your taste). Stir to combine and cook for an additional minute and you’re all done. This is a very simple no frills camping meal that I actually sometimes make at home for the family midweek. There are very few ingredients and it comes together very quickly so it’s great camp meal.
